You can make restaurant-quality walleye in your kitchen with this simple air fryer recipe. The three-step coating process will give a crispy exterior and keeps the fish’s natural moisture. Each serving has an impressive 28 grams of protein with just 1 gram of fat, making this a healthy choice for dinner.


Ingredients

  • 6 walleye filets, thawed.
  • 2 eggs, beaten.
  • 1/3 cup all-purpose flour.
  • 1 cup panko breadcrumbs.
  • 1 teaspoon paprika.
  • 1/2 teaspoon garlic powder.
  • 1/2 teaspoon salt.
  • 1/2 teaspoon black pepper.
  • Cooking oil spray.
  • Lemon wedges for serving.
  • Fresh parsley (optional garnish).

Instructions

  1. Pat your walleye dry with paper towels and cut each filet in half.
  2. Set up your breading station:
    • Bowl 1: Add flour
    • Bowl 2: Beat the eggs
    • Bowl 3: Mix panko, paprika, garlic powder, salt, and pepper
  3. Spray your air fryer basket with cooking oil spray.
  4. Coat each piece of walleye:
    • Start with flour
    • Dip in beaten egg
    • Cover with seasoned panko mixture
  5. Place coated filets in the air fryer basket. Leave about an inch of space between pieces so air can circulate.
  6. Air fry at 400°F for 9-10 minutes. You won’t need to flip during cooking.
  7. Cook remaining filets in batches.
  8. Add fresh parsley and serve with lemon wedges.

Notes

Your walleye should be thawed and patted dry for best results. Make sure not to overcrowd the basket. The fish should reach 145°F inside for safety. Leftovers stay fresh in an airtight container for up to 3 days. You can reheat the filets in the air fryer for 2 minutes to make them crispy again.
