Description
This simple and delicious grilled walleye recipe brings out your catch’s natural flavors with just the right touch of seasoning. You can make it for weeknight dinners or special occasions. The aluminum foil technique ensures your fish stays moist and flaky.
The quickest way to grill walleye combines butter, simple seasonings, and foil-packet cooking magic. Your fish will turn out tender and flaky with flavors that improve but don’t overpower the walleye’s natural taste.
Ingredients
- 2 (6-ounce) walleye filets.
- 2–3 tablespoons butter, melted.
- Seasoned salt (to taste).
- Garlic and herb seasoning blend.
- Heavy-duty aluminum foil.
- Cooking spray or oil for the foil.
- Optional: lemon wedges for serving.
Instructions
- Preheat your grill to medium-high heat (375-400 degrees) and let it warm up for 10-15 minutes.
- Prepare the foil boats:
- Cut two 12-inch squares of heavy-duty foil.
- Spray or brush with oil to prevent sticking.
- Create raised edges to form a boat shape.
- Prepare the fish:
- Check filets for any remaining bones.
- Pat the filets dry with paper towels.
- Place filets in the foil boats.
- Season the fish:
- Brush melted butter over each filet generously.
- Sprinkle with seasoned salt and herb blend.
- Add additional seasonings to taste.
- Seal the packets:
- Fold the foil edges together to create secure packets.
- Leave some space above the fish for steam.
- Grill the walleye:
- Place packets on preheated grill.
- Cook for 13-15 minutes or until fish flakes easily.
- No need to flip the packets.
Notes
- Make your foil boats tall enough to fully close and seal. The cooking time changes based on filet size. You can cook two filets in one foil boat if you have space. Let the packets rest for 1-2 minutes before opening. Your fish is ready when it flakes easily with a fork and looks opaque. Add sliced onions or lemon wedges to the foil packet before grilling for extra flavor.
- Pro Tip: If you notice the edges browning but the center isn’t fully cooked, move the packets to indirect heat to finish cooking.
