Fresh herbs, citrus, and aromatic vegetables are the foundations of this whole baked trevally recipe. The perfectly balanced dish needs just 15 minutes of prep time. You’ll stuff the fish with tasty ingredients and bake it until it’s just right.
Ingredients
- 1 whole trevally (cleaned and scaled).
- 4–5 medium-sized carrots.
- 1 red onion, quartered.
- 1 whole head of garlic.
- 2 lemons, sliced.
- 1 leek, sliced into chunks.
- 1 handful of mushrooms, roughly chopped.
- 1–2 red chillies, sliced.
- 2 tablespoons of olive oil.
- Salt and pepper to taste.
Instructions
- Preheat your oven to 190°C.
- Place the cleaned fish onto heavy-duty tinfoil.
- Season the fish’s inside with herbs and spices.
- Layer sliced onions, lemon, and tomatoes inside the cavity.
- Season the outside with coarse salt.
- Wrap the fish tightly in tinfoil.
- Place onto a baking tray.
- Bake for 35 minutes.
- Open the foil and grill for 5-10 minutes until the skin turns golden.
Notes
Your fish’s size and weight might change the cooking time.
Look for opaque eyes to know when the fish is ready.
Dry the fish before seasoning to get better results.
Baste with its own juices while cooking to enhance flavor.
