  • 4 (6 oz) tilapia fillets, thawed and patted dry
  • 2 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1/2 tsp cayenne pepper (adjust to taste)
  • 1 tsp sea salt
  • 1/2 tsp freshly ground black pepper
  • 2 tbsp unsalted butter, divided
  • 2 tbsp olive oil, divided
  • Lemon wedges, for serving

Instructions

  1. In a small bowl, mix together the smoked paprika, garlic powder, onion powder, thyme, oregano, cayenne, salt, and black pepper. This is your blackening seasoning.
  2. Generously coat both sides of each tilapia fillet with the seasoning mix, gently pressing it into the fish. Set aside.
  3. Heat 1 tablespoon each of butter and olive oil in a large, heavy-bottomed skillet (cast iron works great!) over medium-high heat until the butter is melted and the pan is hot.
  4. Carefully place two seasoned tilapia fillets in the skillet and cook for 2-3 minutes on each side, or until the fish is blackened on the exterior and flakes easily with a fork.
  5. Transfer the cooked fillets to a plate and tent with foil to keep warm. Wipe the skillet clean with a paper towel.
  6. Repeat the process with the remaining butter, oil, and tilapia fillets.
  7. Serve your blackened tilapia hot, garnished with fresh lemon wedges for a bright, citrusy finish. Enjoy!
