The natural briny sweetness of oysters shines through in this classic smoked recipe. You’ll get perfectly cooked oysters with a delicate texture by using a low-temperature smoking technique.


Ingredients

  • 12 fresh oysters, shucked.
  • Cherry wood chips or pellets.
  • Lemon wedges for serving.
  • Fresh parsley (minced) for garnish.
  • Salt to taste.

Instructions

  1. Prepare Your Smoker: Heat your smoker to 200°F (93°C). Add cherry wood chips based on your smoker’s instructions.
  2. Prepare the Oysters:
    • Shuck the oysters if using fresh ones
    • Clean and save the bottom shells for serving
    • Let oysters sit in their natural juices with a pinch of salt for 20 minutes
  3. Smoking Process:
    • Place oysters in a grilling basket or on a mesh mat
    • Put the basket on the smoker grates
    • Smoke until firm and golden brown, about 90 minutes
  4. Final Touches:
    • Take oysters out of the smoker
    • Place them back in cleaned half shells
    • Add fresh parsley and lemon wedges as garnish

Notes

– Cherry or alder woods give you the best flavor profile.
– Drain and pat pre-shucked oysters dry before smoking.
– Boil shells for 10 minutes to clean them if you plan to serve oysters in them.
– Your smoked oysters will last up to two weeks when stored in olive oil in the refrigerator.
