Ingredients
- 8–10 oz smoked herring filets.
- 1 medium onion, thinly sliced.
- ½ green pepper, thinly sliced.
- ½ red pepper, thinly sliced.
- 2–3 cloves garlic, crushed.
- 2 tablespoons olive oil.
- 1 hot pepper (to taste).
- Fresh thyme.
- Juice of ½ lime.
- 2 scallions, chopped.
Instructions
- Prepare the Herring
- Place herring in a pot with enough water to cover.
- Bring to a boil and cook for 10 minutes.
- Drain and let cool.
- Remove bones and flake the fish with care.
- Prepare the Base
- Heat oil in a large skillet over medium heat.
- Add sliced onions, red and green peppers.
- Sauté until vegetables soften.
- Add crushed garlic and cook for 1 minute.
- Combine and Season
- Add flaked herring to the vegetable mixture.
- Mix in hot pepper and thyme.
- Cook for 5 more minutes.
- Add lime juice and chopped scallions.
