  • 2 tablespoons butter
  • 2 cloves garlic, chopped
  • ½ medium onion, chopped
  • 5 oz fresh spinach
  • â…“ cup bread crumbs
  • 4 oz cream cheese
  • ¼ cup shredded parmesan cheese
  • 2 tablespoons fresh dill, chopped
  • 1 sheet puff pastry, thawed
  • 1 salmon filet (67 ounces)
  • Salt and pepper to taste
  • 1 egg (beaten) for egg wash

Instructions

  1. Heat your oven to 425°F (220°C).
  2. Take a pan and melt butter over medium heat. Cook garlic and onions until they turn translucent, which takes about 5 minutes.
  3. Season with salt and pepper and add spinach. Let it wilt for about a minute. This creates your filling base.
  4. Mix in breadcrumbs, cream cheese, parmesan, and dill until everything combines nicely. Put this aside.
  5. Lay out your puff pastry sheet on a cutting board. Place your seasoned salmon right in the middle.
  6. Layer the spinach mixture over the salmon. Make sure it stays on top without spilling over.
  7. Start by folding the longer sides of pastry over the salmon and spinach. Then fold the shorter ends. Trim any extra pastry and seal the edges well.
  8. Place it seam-side down on a baking sheet lined with parchment.
  9. Brush beaten egg all over the pastry and add decorative diagonal cuts.
  10. Let it bake for 20-25 minutes until you see a deep golden brown color.
