Description

Transform your fresh oysters into a mouthwatering delicacy with this simple yet flavorful grilled oysters recipe. This method combines the natural brininess of oysters with a rich, garlicky butter sauce that creates an irresistible combination of flavors.

This classic grilled oysters recipe features fresh oysters topped with a savory garlic-butter sauce and finished with a sprinkle of Parmesan cheese. The high heat of the grill creates perfectly cooked oysters with slightly curled edges and a golden-brown top.

Ingredients

Scale
  • 18 large, fresh oysters
  • 4 ounces (1/2 cup) unsalted butter, softened
  • 2 tablespoons finely chopped garlic
  • 1 teaspoon freshly ground black pepper
  • 1 pinch dried oregano
  • 1 ounce grated Parmesan cheese
  • 1 ounce Pecorino Romano cheese
  • 2 teaspoons finely chopped parsley

Instructions

  1. Preheat your grill to 500°F
  2. Mix the softened butter with garlic, black pepper, and oregano in a small bowl until well combined
  3. Place the oysters directly on the hottest part of the grill, ensuring they remain level to retain their juices
  4. Once the oysters begin bubbling around the edges (approximately 5 minutes), spoon the seasoned butter mixture over each oyster
  5. Close the grill lid and cook for an additional 3-4 minutes until the butter is melted and bubbling
  6. Sprinkle the cheese mixture and parsley over the oysters
  7. Cook for 1-2 more minutes until the cheese turns golden brown

Notes

– For optimal results, use oysters within 24 hours of purchase
– Avoid overcooking as this can lead to dry, rubbery oysters
– Watch for flare-ups when adding the butter sauce
– You can substitute the cheese blend based on your preference
– If using smaller oysters, reduce the cooking time accordingly
