Ingredients
- 700g firm white fish filets cut in 1-inch cubes
- 2 tablespoons fresh chopped coriander
- 2 tablespoons chopped flat-leaf parsley
- 2 garlic cloves chopped finely
- ½ onion chopped very finely
- ½ teaspoon paprika
- ¼ teaspoon cayenne pepper
- 1 pinch saffron
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon salt
Instructions
- Mix all but one of these ingredients in a bowl to prepare your marinade. Keep the fish aside.
- Place the fish cubes in the marinade and coat each piece thoroughly.
- Let the mixture chill in the refrigerator for 2 hours. Give it an occasional stir.
- Take the marinated fish and thread it onto four skewers. Remember to leave small gaps between pieces.
- Cook the skewers under a hot grill or on the BBQ. Eight minutes should do the trick.
- Flip the skewers just once to keep the fish intact.
Notes
Bamboo skewers need a 30-minute water bath before use to avoid burning
The acid from lemon juice starts cooking fish after 2 hours, so keep marination time shorter
Your fish pieces need breathing room on skewers to cook evenly
