This sushi Mexican blends creamy chipotle-infused cream cheese with fresh vegetables and authentic Mexican ingredients perfectly. You can prepare this exciting dish in about 30 minutes. The recipe works great for quick weeknight meals or when you want to impress guests at special occasions.


Ingredients

  • 3 ounces low-fat cream cheese, softened
  • 1½ tablespoons seeded and finely chopped chipotle in adobo
  • 1 large plain flour tortilla
  • 1 large tomato-flavored tortilla
  • 1 large spinach-flavored tortilla
  • ¾ cup low-fat refried black beans
  • 6 tablespoons pico de gallo salsa
  • 1½ Avocados, peeled, pitted and diced
  • ¾ cup chopped cilantro leaves

Instructions

  1. Mix cream cheese and chipotle in a bowl until they blend smoothly.
  2. Heat the tortillas in the microwave or oven until they become flexible.
  3. Spread 2 tablespoons of chipotle cream cheese mixture on each tortilla.
  4. Add ¼ cup black beans and 2 tablespoons salsa to each tortilla.
  5. Top each prepared tortilla with equal amounts of avocado and cilantro.
  6. Roll the tortillas tightly to keep ingredients in place.
  7. Wrap rolls in plastic and place them in the refrigerator.
  8. Cut off the ends and slice each roll into 6 equal pieces.
