- 1–1.5 lbs flounder fillets (fresh or thawed)
- 1 cup panko breadcrumbs (for breaded version)
- 2 large eggs, lightly beaten
- ½ tsp salt
- ¼ tsp black pepper
- ½ tsp garlic powder
- 1 tsp paprika
- Olive oil spray or avocado oil spray
- Lemon wedges, for serving
Instructions
- Preheat air fryer to 400°F (200°C) for 3–5 minutes.
- Pat fillets dry with paper towels.
- Set up breading station:
- Bowl 1: beaten eggs
- Bowl 2: breadcrumbs + salt, pepper, paprika, garlic powder
- Bread the fillets:
- Dip in egg
- Coat in breadcrumb mix
- Press gently for better adhesion
- Spray lightly with oil on both sides.
- Place in air fryer basket in a single layer. Don’t overlap.
- Air fry for 12–15 minutes, flipping halfway, until golden brown and internal temp is 145°F.
- Serve immediately with lemon wedges.
Notes
- For the unbreaded version, skip the egg and breadcrumb steps. Season fillets, spray with oil, and air fry for 8–10 minutes.
- Don’t skip the preheat—it makes a big difference in texture.
- Best enjoyed immediately, but can be reheated in the air fryer at 350°F for 4–6 minutes.
