Ingredients
- 2 (6-ounce) pieces of cod
- 2-ounce Spanish chorizo, thinly sliced
- 1 tablespoon olive oil
- Salt and pepper to taste
- Optional additions:
- Fresh parsley
- Garlic cloves
- White wine for deglazing
Instructions
- Preheat your oven to 425°F.
- Season cod filets with salt and pepper on both sides.
- Heat olive oil in a large ovenproof skillet over medium-high heat.
- Place thin chorizo slices on each cod filet to create a scale-like pattern.
- Cook the cod in the hot pan until the bottom turns opaque, about 3 minutes.
- Roast the skillet in the oven for 5-7 minutes until the fish cooks through and chorizo turns crispy.
Notes
The chorizo releases its flavorful oils while cooking and seasons the fish naturally.
You can prepare breadcrumbs 8 hours ahead and keep them at room temperature.
Spanish chorizo works best in this recipe because of its distinctive smoky flavor profile. Mexican varieties won’t give the same result.
