  • 12 kg fresh yellowtail, butterflied and cleaned.
  • 2 fresh lemons.
  • 1 cup softened butter.
  • Salt and black pepper to taste.
  • Fresh herbs (parsley, chives, and dill).
  • High-heat cooking oil (avocado oil recommended).

Instructions

  1. Prepare Your Grill: Heat to medium-direct heat (around 400°F).
  2. Prepare the Fish:
    • Score the outside with deep pockets
    • Stuff with sliced lemons and herbs
    • Drizzle with oil and season with salt and pepper
  3. Oil the Cooking Surface:
    • Direct grilling needs clean and oiled grates
    • Fish basket needs oil on both basket and fish
  4. Grill the Fish:
    • Place on the heated surface
    • Cook for 5-6 minutes per side
    • Fish should flake easily with a fork when done
  5. Finish and Serve:
    • Brush with herb-infused butter
    • Squeeze fresh lemon juice
    • Season to taste
