Fresh herbs and citrus notes really bring out the natural flavors of the fish in this classic whole grilled trout recipe. The recipe delivers consistently delicious results with minimal prep time, making it perfect for both novice and experienced grillers.


Ingredients

  • 4 whole rainbow trout, cleaned and gutted.
  • 2 tablespoons olive oil.
  • 2 lemons, thinly sliced.
  • 8 sprigs mixed fresh herbs (thyme, marjoram, oregano, rosemary).
  • 1 tablespoon kosher salt.
  • 1 teaspoon ground black pepper.
  • 2 cloves garlic, minced.

Instructions

  1. Heat your grill to medium direct heat (400-450°F) and clean the grill grate well.
  2. Take paper towels and pat the trout dry, then sprinkle salt inside each fish’s cavity.
  3. Stuff each trout with:
    • Lemon slices
    • Fresh herb sprigs
    • Minced garlic Dividing ingredients evenly among fish.
  4. Take olive oil and brush it generously on each trout’s outside, then place them on a baking sheet.
  5. Put the trout directly over the fire and cover the grill.
  6. Let it cook about 10 minutes total, and turn it carefully a few times while cooking.
  7. The fish is ready when its flesh flakes easily with a fork.

Notes

Kitchen string can hold the stuffing in place, but you don’t really need it.

Move the fish to a cooler part of the grill if it cooks too fast.

Keep the skin on during cooking to keep the fish moist – you can remove it after grilling if you prefer.
