Ingredients
- 4 flounder filets (approximately 1½ pounds).
- ¼ cup olive oil.
- 2 tablespoons fresh lemon juice.
- 2 cloves minced garlic.
- 2 teaspoons lemon zest.
- 2 teaspoons smoked paprika.
- Fresh herbs (dill, oregano, rosemary).
- Sea salt and freshly ground black pepper to taste.
- Lemon slices for garnish.
Instructions
- Prepare the Brine: Mix 1 cup kosher salt with ½ cup sugar in a large bowl of water. Submerge filets for 10 minutes.
- Make the Marinade: Whisk olive oil, lemon juice, garlic, lemon zest, and smoked paprika in a bowl.
- Prepare the Fish: Take filets out of brine and pat them completely dry with paper towels. Season lightly with pepper.
- Preheat the Grill: Heat your grill to medium-high (approximately 375°F).
- Oil the Grates: Clean the grates well and oil them to prevent sticking.
- Grill the Flounder: Put filets on the grill and cook for 4 minutes on the first side, then flip and cook for 3 minutes on the second side.
Notes
Important: Watch your cooking time – flounder can get mushy if overcooked.
