  • 4 black cod (sablefish) filets
  • 6 tablespoons butter
  • 1 garlic clove, minced
  • 1 tablespoon fresh parsley, chopped
  • Salt and freshly ground black pepper to taste
  • Lemon wedges for serving

Instructions

  1. Prepare the Fish: Pat your black cod filets dry with paper towels. This will give you better browning on the grill.
  2. Make Garlic Butter: Melt butter in a small pan over medium heat. Add minced garlic and cook for 3-5 minutes until it browns. Remove from heat and stir in parsley.
  3. Prepare the Grill: Heat your grill to 350°F. Oak or pecan wood chips add excellent smoke flavor.
  4. Season: Place filets skin-side down and season with salt and pepper to taste.
  5. Grill the Fish: Put filets skin-side down over indirect heat. Brush with garlic butter and close the lid.
  6. Cook to Perfection: Grill for 12-15 minutes or until the internal temperature hits 145°F. The fish should flake easily.

Notes

– You can brine your fish in saltwater for 15-30 minutes before grilling to retain moisture.
– Clean and oil your grill grates well to prevent sticking.
– Black cod’s high oil content makes it forgiving – it won’t dry out as quickly as other fish.
– Wait until after cooking to remove bones – they’re easier to spot in cooked fish.
