Ingredients

  • 4 (6-ounce) arctic char filets, skin-on
  • 2 tablespoons olive oil
  • 1 tablespoon Dijon mustard
  • Fresh herbs (dill and chives)
  • 23 tablespoons fresh lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat your grill to medium-high heat.
  2. Coat the fish filets thoroughly with olive oil and season with salt.
  3. Place the fish on the grill skin-side down and cook covered until the flesh begins turning opaque and the skin becomes crisp (3-5 minutes).
  4. Using a grill spatula, carefully flip the fish and continue cooking for approximately 2 minutes more.
  5. Check for doneness – the fish should flake easily with a fork and reach an internal temperature of 145°F.

Notes

– For best results, ensure your grill grates are well-oiled to prevent sticking
– Accordingly, you can substitute the basic seasoning with any of the marinades mentioned in the previous section
– As opposed to other fish, arctic char is particularly forgiving on the grill due to its higher fat content
– In fact, you can also cook this fish without turning it at all, simply leave it skin-side down with the grill covered
