  • 1 pound whiting filets.
  • 1 cup all-purpose flour.
  • 1 cup cornmeal.
  • 1 teaspoon dried basil.
  • Cayenne pepper (to taste).
  • Salt and pepper to taste.
  • Vegetable oil for frying.

Instructions

  1. Prepare the Coating: Mix cornmeal, all-purpose flour, cayenne pepper, dried basil, salt, and black pepper in a medium bowl. The seasonings should blend together completely.
  2. Season the Fish: Clean the whiting filets and pat them dry. Add a light sprinkle of salt and pepper.
  3. Heat the Oil: Add enough vegetable oil to a heavy-bottom pan or cast iron skillet until it reaches halfway up the sides. Heat the oil to 375°F.
  4. Coat the Fish: Roll each filet in the seasoned flour mixture until it’s evenly covered. Give it a gentle shake to remove extra coating and place it on a plate.
  5. Frying Process: Place the coated filets in the hot oil with care. Work in small batches so the fish has room to cook. Let them fry for about 5 minutes on each side until they turn golden brown and crispy.
  6. Drain and Serve: Take out the fried whiting with a slotted spoon and let it drain on paper towels. Serve it right away with some lemon wedges.

Notes

Let your coated fish rest for 10-15 minutes before frying to get the crispiest results. Keep your oil steady at 375°F while cooking. Give each piece of fish enough space in the pan – fry in batches if needed. Your fish is ready when it flakes easily with a fork. Press the coating gently into the fish before frying for extra crunch.
