Instructions
- Prepare the Coating: Mix cornmeal, all-purpose flour, cayenne pepper, dried basil, salt, and black pepper in a medium bowl. The seasonings should blend together completely.
- Season the Fish: Clean the whiting filets and pat them dry. Add a light sprinkle of salt and pepper.
- Heat the Oil: Add enough vegetable oil to a heavy-bottom pan or cast iron skillet until it reaches halfway up the sides. Heat the oil to 375°F.
- Coat the Fish: Roll each filet in the seasoned flour mixture until it’s evenly covered. Give it a gentle shake to remove extra coating and place it on a plate.
