To make the Sauce:

  • Sweet chili sauce
  • Lime zest and juice
  • Sriracha sauce
  • Low-sodium soy sauce

To prepare the Shrimp:

  • 1 pound peeled and deveined shrimp
  • Cornstarch to coat
  • Salt to taste
  • Peanut oil to fry

To Garnish:

  • Fresh green onions
  • Sesame seeds

Instructions

  1. Prepare the Sauce: Mix sweet chili sauce, lime zest, lime juice, sriracha, and soy sauce in a bowl.
  2. Prepare the Shrimp:
    • Blot shrimp dry with paper towels
    • Season with salt
    • Coat really well with cornstarch
  3. Cook the Shrimp:
    • Heat peanut oil in a wok over medium-high heat
    • Cook shrimp until opaque (2-3 minutes)
    • Remove from wok
  4. Finish the Dish:
    • Bring sauce to a boil in the wok
    • Return shrimp to wok
    • Toss until coated evenly

Notes

  • Your cornstarch will stick better if you blot the shrimp dry first
  • Tamari makes a perfect substitute to soy sauce for a gluten-free version
  • Any high smoke point oil works as a peanut oil replacement
  • Extra sriracha on the side adds more heat if needed
