- Lime zest and juice

To prepare the Shrimp:
- 1 pound peeled and deveined shrimp
- Cornstarch to coat

Instructions
- Prepare the Sauce: Mix sweet chili sauce, lime zest, lime juice, sriracha, and soy sauce in a bowl.
- Prepare the Shrimp:
- Blot shrimp dry with paper towels
- Season with salt
- Coat really well with cornstarch
- Cook the Shrimp:
- Heat peanut oil in a wok over medium-high heat
- Cook shrimp until opaque (2-3 minutes)
- Remove from wok
- Finish the Dish:
- Bring sauce to a boil in the wok
- Return shrimp to wok
- Toss until coated evenly
