  • 4 (4 oz) salmon fillets
  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • 1 head romaine lettuce, chopped
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup Parmesan cheese, shaved
  • 1/2 cup croutons
  • 1/2 cup Caesar dressing (homemade or store-bought)

Instructions

  1. Preheat your oven to 400°F (200°C). Trust me, this is key to getting that perfectly cooked salmon.
  2. Season the salmon fillets with salt and pepper, then drizzle with olive oil. Place them on a baking sheet lined with parchment paper (for easy cleanup!).
  3. Bake the salmon for 12-15 minutes, or until it flakes easily with a fork. I always do a little happy dance when it’s cooked just right.
  4. While the salmon is cooking, prepare the salad. In a large bowl, combine the chopped romaine lettuce, halved cherry tomatoes, shaved Parmesan cheese, and croutons.
  5. Once the salmon is done, let it cool for a few minutes before flaking it into large pieces with a fork. Add the flaked salmon to the salad bowl.
  6. Drizzle the Caesar dressing over the salad and gently toss everything together until well combined. Make sure every bite gets a little bit of that delicious dressing!
  7. Serve the salad immediately and enjoy! I love adding extra Parmesan on top for that extra cheesy goodness.
