Perfect for a quick lunch or a light dinner, this dish is sure to become a new favorite. Trust me, your taste buds will thank you!
Ingredients
Scale
- 4 (4 oz) salmon fillets
- 1 tbsp olive oil
- Salt and pepper, to taste
- 1 head romaine lettuce, chopped
- 1/2 cup cherry tomatoes, halved
- 1/4 cup Parmesan cheese, shaved
- 1/2 cup croutons
- 1/2 cup Caesar dressing (homemade or store-bought)
Instructions
- Preheat your oven to 400°F (200°C). Trust me, this is key to getting that perfectly cooked salmon.
- Season the salmon fillets with salt and pepper, then drizzle with olive oil. Place them on a baking sheet lined with parchment paper (for easy cleanup!).
- Bake the salmon for 12-15 minutes, or until it flakes easily with a fork. I always do a little happy dance when it’s cooked just right.
- While the salmon is cooking, prepare the salad. In a large bowl, combine the chopped romaine lettuce, halved cherry tomatoes, shaved Parmesan cheese, and croutons.
- Once the salmon is done, let it cool for a few minutes before flaking it into large pieces with a fork. Add the flaked salmon to the salad bowl.
- Drizzle the Caesar dressing over the salad and gently toss everything together until well combined. Make sure every bite gets a little bit of that delicious dressing!
- Serve the salad immediately and enjoy! I love adding extra Parmesan on top for that extra cheesy goodness.
Notes
- If you’re feeling ambitious, try making your own Caesar dressing! It’s easier than you think and tastes fantastic.
- Feel free to customize this salad with your favorite toppings. Sometimes I add sliced red onions or swap the croutons for homemade garlic bread crumbs.
