Ingredients

  • 46 fresh blue crabs
  • 2 cups self-rising flour
  • 2 eggs
  • ½ cup milk
  • 1 tablespoon garlic powder
  • 1 tablespoon black pepper
  • 1 tablespoon salt
  • 1 teaspoon cayenne pepper
  • Oil for frying

Instructions

  1. Clean the crabs by removing:
    • Top shell
    • Gills
    • Mouth and eyes
    • Tail flap
    • Internal organs
  2. Rinse thoroughly under cold water and pat dry with paper towels.
  3. Prepare the coating station:
    • Mix flour with seasonings in one bowl
    • Whisk eggs and milk in another bowl
  4. Heat oil in your deep fryer or pot to 365°F.
  5. Coat each crab:
    • Dredge in seasoned flour
    • Dip in egg mixture
    • Roll again in flour mixture
  6. Fry the crabs:
    • Place carefully in hot oil
    • Cook for 2-3 minutes per side
    • Remove once golden brown

Notes

– For optimal results, maintain oil temperature between 350-375°F
– Let excess egg wash drip off completely before final coating
– Work in batches to avoid overcrowding
