  • 500g/1lb peeled shrimp
  • 250g/8oz elbow macaroni
  • 50g/3.5 tbsp unsalted butter
  • 3 tbsp all-purpose flour
  • 2 cups milk
  • 1.5 cups sharp cheddar cheese
  • 3/4 cup mozzarella cheese
  • 3 cloves garlic, finely chopped
  • 1/3 cup panko breadcrumbs
  • 1/4 cup grated parmesan
  • 1 tbsp olive oil

Instructions

  1. Set your broiler to high.
  2. Heat oil and melt butter in a large skillet over high heat. Cook shrimp for 1 minute, then add garlic and cook until shrimp’s color changes while keeping it slightly undercooked.
  3. Melt the remaining butter over medium heat. Add flour and cook for 1 minute to make a roux.
  4. Pour milk gradually while whisking until smooth. Add macaroni once hot and cook for 8 minutes with regular stirring.
  5. Take the pan off heat, mix in cheeses and shrimp. Add seasoning to taste.
  6. Sprinkle the panko-parmesan mixture on top and broil until golden for 2-3 minutes.
