- 500g/1lb peeled shrimp
- 250g/8oz elbow macaroni
- 50g/3.5 tbsp unsalted butter
- 3 tbsp all-purpose flour
- 2 cups milk
- 1.5 cups sharp cheddar cheese
- 3/4 cup mozzarella cheese
- 3 cloves garlic, finely chopped
- 1/3 cup panko breadcrumbs
- 1/4 cup grated parmesan
- 1 tbsp olive oil
Instructions
- Set your broiler to high.
- Heat oil and melt butter in a large skillet over high heat. Cook shrimp for 1 minute, then add garlic and cook until shrimp’s color changes while keeping it slightly undercooked.
- Melt the remaining butter over medium heat. Add flour and cook for 1 minute to make a roux.
- Pour milk gradually while whisking until smooth. Add macaroni once hot and cook for 8 minutes with regular stirring.
- Take the pan off heat, mix in cheeses and shrimp. Add seasoning to taste.
- Sprinkle the panko-parmesan mixture on top and broil until golden for 2-3 minutes.
