Description

Turn your kitchen into a gourmet seafood restaurant with this classic pan-fried abalone dish recipe. This preparation method explains the natural flavors and creates that perfect tender texture you’ve prepared for in the previous steps.

This traditional pan-fried abalone dish features a golden-brown crust paired with a zesty cocktail sauce. Your careful preparation and quick cooking will give your abalone a delicate texture while developing rich flavors.

Ingredients

Scale
  • ½ pound prepared abalone (sliced and tenderized)
  • 1½ cups seasoned dry bread crumbs
  • 2 eggs
  • 2 tablespoons milk
  • 1 cup olive oil to fry

To make the cocktail sauce:

  • ½ cup ketchup
  • 1 tablespoon prepared horseradish
  • 1 teaspoon lime juice

Instructions

  1. Mix ketchup, horseradish, and lime juice in a small bowl to make the cocktail sauce. Keep it refrigerated until serving.
  2. Heat olive oil in a large heavy skillet over medium heat for about 5 minutes.
  3. Whisk eggs and milk together in a shallow dish.
  4. Place bread crumbs in a large resealable plastic bag.
  5. Dip each abalone slice in the egg mixture, then place in the bag with crumbs and shake to coat evenly.
  6. Fry the coated abalone for 3 to 5 minutes on each side until golden brown.
  7. Place on paper towels to drain excess oil.
  8. Arrange on a serving platter with lime slices and fresh parsley as garnish.

Notes

Don’t overcook: Your abalone will become tough when overcooked. Watch it carefully during frying.

Temperature control: Keep medium heat throughout cooking to brown evenly.

Oil level: Use enough oil to cover half the abalone slices’ thickness.

Make ahead: The cocktail sauce tastes better when prepared up to 24 hours in advance.
