This Asian-style steamed cod combines tender fish filets with fragrant ginger, scallions, and a light soy-based sauce. The recipe delivers exceptional results in just 20 minutes, making it perfect for weeknight dinners and special occasions.

  • 4 skinless cod filets (68 ounces each).
  • 3 tablespoons rice vinegar.
  • 2 tablespoons soy sauce.
  • 2 tablespoons fresh grated ginger.
  • 6 scallions (green parts cut into 3-inch lengths).
  • Coarse salt and ground pepper to taste.
  • 1 lemon to serve.

Instructions

  1. Prepare the Sauce: Mix rice vinegar, soy sauce, and finely grated fresh ginger in a large skillet.
  2. Season the Fish: Pat the cod filets dry and season both sides with coarse salt and ground pepper.
  3. Arrange for Steaming: Place the seasoned filets in the skillet with the vinegar mixture.
  4. Begin Cooking: The liquid should come to a boil, then reduce to a gentle simmer. Cover the skillet.
  5. Steam the Fish: Let it cook for 6-8 minutes until the fish is almost opaque throughout.
  6. Add Aromatics: Add the prepared scallions over the fish.
  7. Final Cooking: Cover and cook for 2 more minutes until the fish becomes completely opaque and the scallions wilt slightly.

Notes

Your steamer lined with spinach leaves adds flavor and makes cleanup easier.

A splash of white wine can improve the steaming liquid.

The fish should flake easily with a fork and reach an internal temperature of 145°F.
